【植物抹醬比一比】- 營養生Negimen





【植物抹醬點樣揀?】不少素食或害怕食物膽固醇含量的朋友都會選擇在麵包上塗上植物抹醬,但您知道由不同植物提煉出來的抹醬在營養成份上有甚麼分別嗎?


傳統植物抹醬是由液態的植物油,透過氫化過程轉變為半固體或固體的人造牛油。於氫化過程中,有一部份氫化不完全的不飽和脂肪,會轉變為反式脂肪,對人體有害無益。現在亦有一些食品公司用冷製方式製作出反式脂肪極低的植物牛油。 


營養師提提你: 雖然植物牛油不含動物膽固醇,但當中的飽和脂肪和反式脂肪一樣會增加患上心血管疾病的風險,所以建議無論是牛油或是植物抹醬都盡量減少食用。

【How to choose plant-based spread?】Vegetarians and people concerned about cholesterol in food may use plant-based spread instead of original butter. However, do you know the nutritional differences between spreads produced by different plants?


Traditional plant-based spread is transformed from liquid vegetable oil into semi-solid or solid margarine through a hydrogenation process. During the process, some unsaturated fats that are incompletely hydrogenated will turn into trans fats, which are harmful to the human body. There are also food companies produced plant-based spreads with very low trans fat by cold processing.


Friendly reminder: Though there is no cholesterol in plant-based spread, saturated fat and trans-fat inside it may also increase the risk of cardiovascular diseases. It is recommended to reduce the intake of both original butter and plant-based spread.
