若從米的特質來分辨,稻米可分為粳稻、秈稻、糯稻3種,而不同的米口感之間存在差異是因為直鏈澱粉含量和與支鏈澱粉的比例不同。

Rice can be divided into 3 types by distinguishing from its characteristics, including japonica rice, Indica rice and glutinous rice. The difference in texture is mainly due to the different content of amylose and its ratio to amylopectin.


💡Japonica rice contains a comprehensive range of amino acids, which also contains trace amounts of fat, calcium and vitamin B, making it an ideal basic food.
